I am finding it really frustrating that despite having upgraded my iTunes and iPod Touch to iOS5.1, I cannot wirelessly sync when on the same wifi network. I have enabled everything on iTunes and the device to support wireless sync, however every time I disconnect the device from the computer (via the cable) the device list on the left hand pane in iTunes disappears and therefore I can't sync unless I physically connect the devices.

Anybody have any clues as to what I might be doing wrong?

I'm going to guess you've already figured this out by now, but the way I did it was hooking it up to the computer.

    1) Click on the iPod under devices in iTunes

    2) Scroll down to options

    3) Click the checkbox that says "Sync with this iPod over Wi-Fi".

    4) Quit the application, unhook the device, and start iTunes again
