Are you specifically talking about ripping CDs? If so, go to Edit > Preferences > General, and change your setting for "When you insert a CD" to some value other than "Begin Playing."
No, so what happened is that I lost my whole music library due to a system crash. I am transfering from my external hard drive. Each of the files I added created a playlist. Even when I download music it goes into my itunes and starts immediatly. I just deleted all the playlists but it's still annoying when I'm trying to listen to something while adding music.

That is a setting in your browser that tells what to do when files of certain types are downloaded.
For example, if you are using Firefox, go to Options > Applications, and see what it is set to do with "MP3 Format Audio." If it is set for iTunes, change it to "Always Ask."
Other browsers have similar settings.
No that's not it, It only makes the playlist when I add music to iTunes.
This is a gargantuan, stupid bug.
SOLVED! After much trial and error over several days, I've discovered that iTunes 10.3.1 is the last version that will not autoplay! It may have been a problem in older versions as well but I know on my computer, that's the most recent one that works.
Of course, it would be fantastic if you could actually use the controls to play music while it's importing but I guess that's a mighty tall order and I should be happy with what I got.
To downgrade (upgrade), first uninstall your iTunes using these instructions: http://support.apple.com/kb/ht1923. Then, use ByeTunes to clean up all the extra iTunes droppings this spoiled baby software left all over your computer, which you can get here: http://remove-it.org/tools/byetunes. Then, get the older, better version of iTunes here: http://www.oldapps.com/itunes.php?old_itunes=82 .
After you install, make sure to tell it NOT to download the most recent version (which it will ask) and check the "Don't ask me again" box. Voila.
Make sure to follow the instructions on removing itunes precisely. I did it "my way" many, many times (including just using ByeTunes alone) and it f****d up the uninstall and caused me many headaches. The way I've described is smooth and painless.
Again, this fix and the links above apply to iTunes for Windows. The process and exact version number may be different on a Mac.
Correction: it's not a gargantuan bug. It's a tiny, little, miniscule bug that causes gargantuan headaches, which Apple could very easily fix in probably one tiny line of code by one programmer in one minute, but refuses to.
