Am I able to plug my Yamaha keyboard into my Mac, play a song and then change the piano to a different instrument?

Playing on the garageband 'piano' is somewhat difficult if I want to play an actual song, so is there any way to attach my keyboard with a USB, play the sheet music on that and transfer it to Garageband in order to make it a different instrument track? (ie. change keyboard to brass, guitar, etc.)
