I want to deregister my iphone 3GS from my iTunes but I cannot work out how to do it? Also, can you change the telephone number of a device once you have already registered it with iTunes?

The phone numebr would be tied to the SIM card.
I'm selling the phone and at the moment when I usb it to iTunes it shows up in my name? I want to remove my name as the registered owner.
You can restore it as new or you can erase all content and settings. Each are covered in the manual.
Go to My Support Profile - find it from http://www.apple.com/contact/. Select Lost of Stolen Apple Products and you will find My Support Profile. Log in with Apple ID and unregister the device(s). A confirmation email will be sent. Then do a restore to wipe out all data and settings. I just did it for two old devices that I gave to my mum so she's the new owner now on Apple's support system.
