I want to make sure that they both back up the same information - Messages, Camera Roll, etc. If so, the iCloud backup sounds like a much more convenient solution but I want to make sure I'm getting the same things backed up since I trust the iTunes backup.

Both backups save the exact state of your phone: apps, data, settings, etc. They do the exact same thing, but as you pointed out, iCloud is much more convenient.

Apps are not included with the backup. They are saved in the computer's iTunes via the sync process. The data that is used by the apps is saved by the backup, which could be either in iTunes or in iCloud.
