Opt-out of automatic reporting
You can change your reporting options at any time:
1. Choose Apple >System Preferences, click Security & Privacy, and then click Privacy.
Open the Privacy pane of Security & Privacy preferences
2. Deselect “Send diagnostic and usage data to Apple.” Diagnostic and usage information will no longer be sent to Apple.

I have this same question, but on Snow Leopard 10.6.8, where the Preference Panel is different, it doesn't show the Privacy option. I found it on Console's Preferences.
I accidentally unchecked "Automatically Send Anonymous Diagnostic and Usage Data to Apple" on Console Preferences and immediately after that, this option grayed out, don't understand why I can't re-check this option. Can you help me to send that data automatically again?
I could solved it too on snow leopard 10.6.8. Leave you a copy.
Thanks, red_menace, you were right; after an itunes forced exit, I was asked to create an inform, then to send it to apple and finally to "Automatically Send Anonymous Diagnostic and Usage Data to Apple". I accepted and cheked "Don't ask me again".
Now the Console Preferences check box is ennabled and checked again.
