Changing download/install location
I was just wondering if there is a way to change where the apps you buy are downloaded to.

No. Apps are downloaded to the Applications folder unless you are upgrading to Lion v10.6.8.

All apps are downloaded to the Applications folder from the Mac App Store whether you are running Snow Leopard v10.6.8 or Lion v10.7.x
No, you cannot change the download location.
The reason that the apps are downloaded to the Apps folder is becasue that is where apps expect to find themselves when interacting with Mac OS X and the reverse, that is the location from which Mac OS X expects to find apps working.
