I worked out how to place a foreign letter in pages, just hold down the letter like, e = è... so on, but i keep getting a gap around that letter in the middle of a spanish name, "c è sar" because of the font which is LiSong Pro because i'm writing a script which has to be done in that or a similar font is there any way to stop the gap apearing?

It would help if you tell us which MacOs system you are using and which Pages version. Also tell us which language is the system language.
When I hold down e I get eeeeeeeeeeeeeeeeee and no space on the sides.
To get è I do this: Shift + ´ then I press e. That is on a Swedish keyboard.
Don't use LiSong Pro font for the latin part of the text. It is meant for Traditional Chinese and obviously seems to wrongly space the accented character, because somebody didn't do a proper tracking table for the font. There are lots of errors in Chinese fonts probably because of a fixation on cheapness, not quality.
I've rarely encountered any problems in the even more complex but fastidious Japanese fonts.
Just use a regular serif font for the Spanish/Latin script which can be implemented with Character styling.

latin - british keyboard, i hold down "E" and a little menu pops up from the letter showing, è é ê ë...
macbook pro 2011, mac os x version 10.7.2 (latest) and pages 11 latest version.
cheers i may use a diffrent font for the proper spelling of foreighn names.
It is good to know the computer setup as Snow Leopard doesn't always work as Lion. I have Snow Leopard and do not have the pop up menu when holding down a key.
Pages 11 doesn't exist though. You probably have Pages '09, v. 4.1.
