Many users like to leave their iMac on sleep position , but I've noticed that the inside FAN still working .
What to decide over night ?

I believe the fan will continue working after you put the imac to sleep until it reaches the required internal temperature.
The fan will normally stop when things are cooled down...there is a lot of debate on here about studown vs sleep...my view is sleep unless going away for more than a couple days, then shutdown. Leaving it running in sleep mode maintains a constant temperature for the internals.
I leave my machine on 24/7 and only let the display sleep. When I get "wake" it the temps are typically:
HD 37
CPU 32
Airport Control Card 42
GPU 39
HD Bay 39
Mem Controller 37
Power Supply 56
