is it possible to add new categories to iTunes under the Library section (Where it says Music, Movies, TV Shows, Podcasts etc).

Not that I know of. Go to iTunes > Preferences > General and make sure you have checked all the ones you want to see.
You can't add a new category that doesn't already exist. You can get ones that exist but are hidden by doing what Jim VanLeeuwen suggests, or by right clicking on the column header bar and activating a hidden one.
If you really want a new category there are ways to be creative with iTunes such as simply using an existing category that you haven't been using. For a certain subgroup of music I used to use "Year" for a four-digit serial number I wanted. I routinely use "Grouping" for the album label identification that record companies use to identify their products. I also use BPM for another 3 digit status coding system for some tracks.
