Well, the reason it voids the warranty is because it can cause unrecoverable damage including the physical features such as buttons not functioning, loss of cell service etc.
It's a constant cat-mouse game between Apple & the jailbreaking community. Depending on how you jailbreak your phone, you may never be able to install a stock firmware on the phone. Some inexperienced users end up turning their phones into paperweights.
Yes. It also means the security of the phone is compromised. You will not be able to get any support at all from Apple or on these forums. You may brick the phone. You may never be able to upgrade the firmware again... the list goes on.
