How do I get a soft, round piano sound in GarageBand '09?

I have found the GB piano to be too hard. If you think it worth it - I certainly did, get the Steinway that comes with Orchestral Apple Loops. The sound is rich and harmonically detailed. There's a load of other very good sounds too of course.

These used to cost £50 a set but you can get the lot for £20 when you buy MainStage for £20 from the App store. GB (GB '11 anyway) automatically recognises the loops when they are downloaded.

One more thing: adjust the keyboard sensitivity in Preferences/Audio MIDI to get the best touch.

Much of that has to do with how the music is composed and played:

Slow, minimal (one note in right hand against single left hand notes, simple counterpoint), soft.

If you've got basic GB, might as well use the default Grand Piano.

Then, with that style of playing, try adding a long reverb. To do that, with the track selected, go into the Edit pane on the right, select an empty slot, click it and select Track Reverb. Click on the plugin picture so you get the reverb panel to pop up, and then select a long reverb such as Concert Hall, Drum Cave, whatever. Try experimenting with the different patches and settings.

In the YouTube, the reverb complements the piano notes, taking over where they leave off. You could imitate that by leaving enough space between your notes for your reverb to fill it up.
