You can't directly download OpenGL onto your iPod Touch.
What IOS do you have. The latest is 5.0.1 for 3rd and 4th generations iPod Touch.
You can update through computer's iTunes with your iPod Touch connected.

There is no such thing as an 8 GB 3G iPod. Apple only made 32 and 64 GB 3G iPod. The 2G iPod does not support OpenGL ES 2.0 . Many uses are like yu and though they has a 3G iPod only to find out much later that it was a 2G iPod.

How do I update it off iTunes? I am on it right now with my Ipod Touch connected and I don't know how to get it.

As I said you have a 2G iPod and it does not supprort OpenGL ES 2.0. A 2G iPod can only go to iOS 4.2.1. To update see:
