I want to have 3 displays running on my Mac Pro 3,1. Two are 20 inches and one is 27 inches. I've found out that the 8800 GT has two dual/link DVI connectors so I would think it can run 4 displays, but I'm not so sure.

That is not what dual-link means. Each DVI port can support a single monitor. Dual-link DVI ports have twice the bandwidth to support higher resolutions then standard DVI.

2 ports 2 displays, no more.
Single link DVI can support resolutions of up to 1920 x 1200 while dual link DVI can handle resolutions up to 2560 x 1600.

To connect a third display, you will need to install a compatible third party display card.
