what is the best way to transfer data / files etc. from desktop imac(s) to a new MBP?

Use the Migration Assistant that automatically starts the first time you boot your new Mac.
Use either the Setup or Migration Assistant. If you've already set up your new computer then use Migration Assistant to transfer your Home folder, applications and support files, and system preferences to the new computer.
