Sepia page not an option in iBook

I purchased a bird reference book through the store but the option to change fonts size or page color is not available. Anyone know why this would be?

Are the options still available to you in other books in your library? If so, then my guess is that the developer of this book opted not to allow changes to these settings in this particular book.

It might be that the book was created as images, rather than text. This would make sense if it's a bird book. If the words on the page are actually images, then iBooks doesn't allow you to change the size. Likewise, the page color wouldn't work if the whole page is an image.
