IIRC the minimum OS for that particlur MacMini model (Snow Leopard Server pre-installed) was 10.6.3 (Build 10D2235):

It's the different build versions for the different OSes you have to be mindful of:

If the DVD you're using is the same OS version but different build, it won't work (the reason for why you're seeing the no entry sign' regardless of how you try and provide the installer to that hardware.

The only thing that makes that particular unit a 'server' is the Server OS that came pre-installed on it. There is nothing in the hardware itself that would make it a server as such. In fact it has a lot of what most people would regard server must haves, missing.
Perhaps the 'best thing' you can do is to install the final release of SL 10.6.3 Build 10D575 on any qualifying Mac and update it to 10.6.8. Target Disk Mode the MacMini to that Mac, reboot that Mac from the Installer DVD and use Disk Utility to restore the Installed 10.6.8 onto the MacMini.

How could I obtain such a build if my retail version DVD is not that build?

Assuming the Installer Disk is the Retail one listed here:

Look at the DVD itself and it will list what OS Version it is. For example: 10.6, 10.6.3 etc. Then consult Support Article HT1663 listed in the previous post.
If you're trying to use a gray-coloured DVD that is not the one that came with the equivalent non-server version of the mid-2010 MacMini hardware (assuming you had it?) it won't work. Neither will any other gray-coloured installer disk that came with any other non-MacMini hardware regardless of what OS it is. You won't be successful with later OS versions of gray-coloured DVDs that came with the later model MacMini hardware either as the mid-2011 model came with 10.7 pre-installed.

yes a coloured one, I know the grey ones are machine bound.

It says 10.6. so you are saying if it was a 10.6.3 it would say so?
When I start the installer on it and go to about this installer it says v23.1(48)
as the mid-2011 model came with 10.7 pre-installed.
Mine came with SL Server installed and I have the original SL Server Disks (2).
Do you knwo how could I obtain a 10.6.3 (Build 10D2235) since it epears that my retail version DVD is not that build? Can I still order this at Apple?

The version available on the website is the last Retail version Apple made for 10.6, which would be 10.6.3 Build 10D575. I know because I have all of the retail installer DVDs listed in the link previously posted.
