Is it possible to reset your ipod back to a date without having it backed up on a computer. I was pretty positive i had my notes in all notes on my ipod and now most of them are gone and only a few are there that i had on an email account. Should i reset or restore would that bring them back??

No. You have to restore from backup to get the iPod back to the state it was when the backup was made.
How do I do this? I am afraid if I hit sync (with my note deleted on my iphone now) that the sync will override from the last backup when my ntoes were there.
This is ridiculous.
There are plenty of people, including me, who have relied on Notes to record important data only to find out that Notes are easily deleted, unrecoverable and beyond the backup perview of iCloud and Time Machine. The workarounds found here (IF they work) are complicated, convoluted and archane in this age of rapid, user-friendly computing.
Apple has been frustratingly silent on this issue, in the face of clear consumer dissatisfaction.
Apple needs to fix the problem or abandon the app.
