Check the above post out. I just used it to restore an email and it worked great. If you can't see the post its
have email app active on desktop
double click on tm app (i used launchpad to find it)
go back to the email you want to restore and when active click on restore
the email will appear on the sidebar in the mail app under on my mac in a folder under Time Machine -recovered messages

hey david NYYN1. i'm stuck.
with Mail.app open, i click on TC. Pause, hang ( aka beach ball). I see FINDER is not responding and I RELAUNCH,
rebooted, use ethernet instead of wifi, searched userposts.
any ideas? anyone?
Mail should be the active app. Then click the Time Machine icon in your Dock, or Enter Time Machine via the TM icon in your menubar. See the blue box in Time Machine - Frequently Asked Question #15.

I have filevault on and when I try to recover mail all it offers is to replace my current mail with mail from my last time machine backup which was 2 weeks ago. Is there anyway of recovering a specific email folder that was accidentally deleted?
Which File Vault? If it's "Legacy File Vault" used on Leopard and Snow Leopard, no. You cannot restore any individual items, only your entire home folder. Note that if you were using that, and didn't convert when upgrading to Lion, you still have the old version.
If it's the new, whole-disk encription of File Vault 2 used on Lion, yes. See the blue box in Time Machine - Frequently Asked Question #15.
