It seems that ios5 broke many apps ability to stream audio and video to AppleTV when multitasking and or when the ios device goes to sleep.
Whether Apple fixes the issue or if its up to developers to apply their own fixes i thiught we could put together a list of apps that we know work properly.
So far I can confirm:
Safari
BBC iplayer
AirVideo
TED
Apple TV, iOS 5.0.1
Public Radio Player works when iphone goes to sleep...though you have to "trick" the ios device by first starting the music player and selecting airplay...then start public radio player...it continues to work fine with the ios device locked.
probably belongs in another thread, but there are several apps that WILL airplay even without the icon...if you start music player and select airplay first.
p.s. can anyone point me to a post that discusses why the apple tv requires that the video monitor be turned on initially for airplay audio to start streaming?
The issue is so old (it appeared nearly 6 months ago), that there are no more postings about it, because it's obvious that Apple will never address it. It's not interesting for them.

I had the same problem and this worked for me:
I found that, when my ipad gows to sleeping mode, streaming does not stop.

It works. But it doesn't change the fact that this is a bug and that Apple does nothing to fix it.
Its not a bug as much as it is a different approach to saving battery life. App developers are able to fix the issue within their apps programatically. Apple is notorious for making others adapt to their decisions instead of than the other way around.
What app does this work with? I tried it on "Frequency" and it doesnt make a difference.
The best fix ive seen so far (qt least for app falling asleep with the device) is to have it plugged in. Devices fed power dont actually fall asleep... They just dim and continue to stream without having to tamper with settings every time.
Spotify work too
What airplay enabled ipad/iphone/ipod apps still work properly after ios5 update.
