Using Airport Express as an extender to my Time Capsule network. Time Capsule updated to 7.6.1 without a problem however Airport Express is reporting an error -6753. Any ideas?

The AirPort Express lost communication with the Time Capsule during the time that the Time Capsule was updating.
Power down the entire network
Wait a minute
Start the modem first, wait a full minute
Start the Time Capsule the same way
Start the Express the same way
Start other devices
If that gets the Express back on the network, you can now try the firmware update again.
You may have to repeat the process above again as well.

That worked well. It seems to have taken the update too.
This stuff is so reliable, I'm at a loss when something goes wrong!

Next time, suggest that you power off the Express before you update the Time Capsule. Wait for the Time Capsule to update and then power up the Express again. Then you can update the Express.
