Scaling an image. Why do I have keyframe issues?

I have an image with text on it and I want to zoom into the letter "O" as a transition. The transition part has worked out great, however when I scale from 100% to 1200%(size needed for this effect) it will go up then left then right and do directions i didnt tell it to do. I only have 2 keyframes???

Does this have anything to do with "curves" or something? Because I'm not sure what that is. How is this done? And also smoothly...
