I too have been having the same problem over the last couple of weeks. X.7.2 and 3, iMac and MacBook Air (both systems, both Macs) and it's driving me crazy. Pause for too long, and the cursor jumps to the beginning of the notes.
Any help/terminal command, something to halt this infuriating behaviour, would be much appreciated.
did the jumbo download and update to 10.7.3. I am still experiencing the cursor jump in Address Book.

Only workaround I've found is to hit EDIT, and the cursor won't jump to the beginning.
It was always strange that you could edit notes, but no other fields without hitting edit, even though it's been that way for 10 years.
If 'engineering' are listening, make it so we can edit any fields without an edit button, please.
Edit in Address/Contacts and iCal/Calendar is extremely annoying. Do I have to click Edit to type into Pages??
Thanks, yeah it doesn't do that in edit. However, that was the beauty of notes not having to push edit and being able to add notes on the fly. 🙂 Well hoepfully they will fix this in their next patch. Thanks for the help.

select Edit first then make your changes. This solved the issue for me.
I can explain a little: if you change the notes part of a contact, it seems as if the changes made are there, but as soon as your computer or the Addressbook are closed and reopened they are gone. If you don't quit Addressbook for days or longer it seems as if the changes are there permanent. They are only saved in the database permanently when you make changes by clicking the edit button! Otherwise they are just there in the cache and will not be saved in the database.

I'm having the same issue in 10.7.5. Most annoying!
Any chance it's fixed in Mavericks? If Apple can get rid of the rich Corinthian leather, they should be able to get rid of this infuriating behavior.
If you click "Edit" before entering text you should not have the problem.
Worked for me.....
I would call that a workaround, not a solution. There's no good reason it should behave this way.
