I've just checked with clause 2.8 on the terms of use and I think we're okay to discuss this, so long as it's for your personal use. OS X offers no built-in way to record streaming audio. You will need third party software. You will need software to record the audio, Audacity is excellent and free. You will also need software to route the audio from the soundcard to Audacity, Soundflower is what you need - also free.
So long as it's ok to discuss this...
A very easy way to do this is to use Audio Hijack Pro. This is a very cool program, which I use also as an equalizer for non-iTunes music (e.g. Spotify, YouTube etc.)

Thanks so much for your help. Re clause 2.8, yes this is for personal use only. Have to admit that issue occurred to me after I posted the question.

The app Radio for mac can play and record streaming internet radio. Recordings are saved as mp3s.
