The stacked graph always picks the most items as the x axis and I want that to be the y axis. How can I specify which set of data I want to be on the x axis? This is for a stacked bar graph.

The two axes on a bar chart are the Category axis and the Value axis. The category axis consists, generally, of a list of titles. Always text. For this reason, the Chart feature expects the Category axis data to be in a Header Column, usually Column A. (Header columns always default to text format, unless forced to something other than Automatic or Text.)
With your Category titles in Header Column A and your various parts of the value in columns B, C, etc., Select all the data columns and then Insert the Stacked Bar Chart. Your Categories should be properly displayed.

I wanted to have dates along the x axis and text on the y but no matter whether I put the text in column A header or the dates in column A header, Chart always put the text on the x axis. But I figured out a work around. If I selected more rows than I had columns, then Chart will put the rows on the x axis. It makes for some blank space in the graph.

Select the chart. Click the circled control on the table (top left).
Booth charts (and tables) show the same data. Note difference in orientation of the three lines in the control.
