Q: What's the point of FileVault?

Of the many recent changes and updates that Lion offers, FileVault has me a little baffled.  What's the point of it?  Does it allow me to encrypt my files and folders with a password?  If so, I haven't seen that option yet.  After turning on FileVault, Lion started the process of encrypting my files (so it says) but without the option to enable a password for folders and programs, I'm not sure I understand what purpose it serves.

What scares me is the fact that I, who by no means knows anything more than the "say" command, changed the password on my deceased Uncle's 2010 MBP which was running Snow Leopard. I did this simply by going into the command prompt, entering a series of commands which I found on Google, and creating a new administrator account.

If you like to play video games and use clients like Steam or Origin and have a HDD, I would not recommend you to use FV, I've had so much crashes with it...

Does this mean that my macbook pro has to be online and signed in in order to access it from logmein?  I have been using logmein on a PC and am thinking about dropping it for team viewer.  You say both of these are affected.  If I have to be online and signed in it seems that is much more of a security threat than someone stealing my mac and reading the hard drive with another machine.
