I have this same issue. This is the message in the Windows event logs:

I have uninstalled and reinstalled all the itunes related components and applied all Windows updates. This is on a Windows7 64 bit PC using 64bit iTunes.

I have also checked the disk and memory for errors, both are fine. Any suggestions anyone?

JaMMyJaM, you have the simplest solution and least "dangerous."

My iTunes wasn't crashing or stopping... it was just really SLOW to open. Like as in 60-120 seconds slow. I dug around looking for a large file and found the Cache.db file was bloated to 96MB. No idea why or how. Rather than delete (and risk who knows what), I just renamed it to *.OLD and itunes came up in 19 seconds. Not great, but better. And so far, the program has not created a new cache.db.

I had previously uninstalled Bonjour and thought that had helped, but then I was back to 60 sec+ next day. Mysterious!

For the record: Win7 Pro, x64, 40GB or more music files, sync with iPhone and iPad.
