Go into your setting>general>reset then tap erase all content and settings.

Two choices: 1. On the phone itself: Settings>General>Reset>Erase All Content & Settings, or 2. Plug the phone in, iTunes running, and on the Summary Pane, hit the "Restore" button. Eject when finished, do not sync. Both methods return the phone to a state just like it was when first taken out of the box, with all of your data & settings erased.

I restored without sync my 3gs and also tried to reset the phone by erasing all data and settings but when I went back into the Settings>iCloud it still listed my Apple ID too. Also when erasing from the field where it shows your personal ID and then exiting and returning into the iCloud section it will still have your Apple ID listed in the field.

You can remove the listing of your Apple ID by selecting the Settings>Store button and then select where it has your ID listed. A window pops up and you can select the Sign Out button. Go back into the iCloud button and your Apple ID will be removed and it will say example@me.com again.
