Try the Pages '09 User Guide. It's free, and can be downloaded via the Help menu in Pages. The guide is a fully searchable PDF document.
Here's the first three hits from a search on the last four words (omitting 'the' of the subject line of this thread (click for larger view):
Item 7 in the list, from the top of p. 54, is a brief statement of how to have the first page headers different from the rest of the section. The third hit (on page 64, visible to the left) looks more promising, and does give more specific istructions.

Insert a Section Break. On the first page of the new section, type what you want to put in the header. Once you start typing, a button will appear that says "Start new header/footer here". Click that and you will be good to go.

Setup (Gear top right) > Section > Headers & Footers
This is exactly why the "Contextual UI" falls flat on its face. How can it work out what you want to do if you can't communicate it, because you can't find it.
The same thing with page numbering formats, in a similar bad location and doesn't show up when you click on the page number.

Pages v5 is not based on Pages '09 (or its documentation). The Help : Pages Help menu item in any release of Pages v5 is minimalistic, and not intuitively navigable. It simply leaves people out on a limb with a dull saw. This support community serves as the definitive Pages (take your pick) manual.

This will give you a new page, and you can make the header different than the first page. (especially useful for APA)

Your reply is correct. The original post was made in February 2012 when Pages '09 was the current version. Your reply correctly refers to Pages 5.6.1 and it works for me.
