I have a bunch of images I want to make into a picture book to put on the iTunes Bookstore. Can this be done using Pages?
I don't like how iBooks Author doesn't have the 'page flip' aninmation, so I need to make sure Pages does as well. Thank you for your help!
You can but it does not have animation to my knowledge.
I want the animation in my book. So Pages will get it done? It can create files that can be uploaded to the iTunes Bookstore?

It seems like you're getting confused between ebooks on the iBookstore and iBooks author books on the iBookstore.
The books that have the page turning animation are (for the sake of this conversation) ebooks - they do not have strict formatting and the iBooks application itself adds the page turning animation.
iBooks author does NOT create ebooks. It creates graphically rich text books (or picture books, or travel guides, or whatever else you want to make). These books have a structured layout, images, videos, 3d models, etc but they don't get the page turning animation. The page turning animation is only for ebooks at this point.
As far as I know there is no public facing system for making ebooks, only iBooks author books. To create an ebook you need to go through a publisher. They are 2 different categories of books that sit side by side in the iBookstore.

That's not correct. Apple opened up publication of standard epub books in the iBookstore with page turning to individuals nearly two years ago and released a version of its Pages app which can export to epub in the summer of 2010.
Right you are - sorry about that.
In my personal opinion picture book ebooks kind of suck. The pictures don't fill the page properly and seem kind of glitchy. I think iBooks Author is still the best for a picture book.
Is there a simple way to make epubs through Pages? I have 50 graphic illustrations saved as images that I want to drag & drop to make a picture book. Is this possible?

iBook author is a great idea that was released before its time. It is a very crude piece of software. Is there any source of literature on it rather then hit and miss on a topic in a search?

What are you talking about exactly? In the iBookstore there are two kinds of books, .epub and .ibooks. For .epub the Apple app is Pages, for .ibooks it is iBook Author. .ibooks can only be read on an iPad.
For iBook Author there are various sources of info, such as

Using pages to create ibooks as the original post was asking. ibook is not a fully matured application and is wanting. Pages is more robust and it would be nice to be able to save as an ibook.
I gather the answer is no it can not be done and we are left only with ibook.

Pages can certainly produce an "ibook" with the .epub format. Does that meet your needs? If not, and you require your "ibook" to have the .ibooks format, then iBook Author is the only app which produces that.
Or perhaps you need your "ibook" in the "fixed layout .epub" format:
