I see the Express in my list of Networks (Network B). I'm using Network A to connect to my modem for internet, and I'm guessing thats why iTunes is not giving me the option to send my music to Network B... or is it?

How do you have the airport configured ? If you've set it up to join Network A, then you should still be able to connect to the internet while connected to Network B, and hence will not have to switch networks every time
