I don't have Apple TV yet but my oversimplified understanding is that it's a wireless cable. Whatever you can do with a cable, you should be able to do with Apple TV. For example, the original iPad does NOT support mirroring but the iPad-2 does. Both versions allow you to use the Videos app and put movies on the television.

I have an iPad 2 and AppleTV 2, and yes you can stream audio and video from iPad to ATV, and you can use screen mirroring so that what you see on iPad you see on ATV. Works great!
Now, if you're asking about the reverse direction, no you can't control the iPad from ATV.
On the iPad 1 you are limited on what you can AirPlay. For example AirPlay Mirroring is only available on iPad 2 and 2nd generation Apple TV http://support.apple.com/kb/TS4085. So, with iPad 2 and 2nd generation Apple TV you can stream anything on your iPad to the TV.
With AirPlay on iPad 1 you can only stream videos, music, photos, and YouTube. What you won't be able to stream is something like Hulu.
