By using Webmail for the account or a mail program on a computer that has that feature. The iOS Mail app does not have that feature.
I assume you are referring to an exchange email. Find out if your exchange server has a webmail option or in other words a http server for viewing your email using a web browser. It looks like xxxwebmail.xxxxxxx.com usually. Log into you email with your credentials via safari and go to options. The first option is to set out of office auto reply. Your IT dept. or your Exchange server administrator can get you this info.
