    Welcome to the Apple Community.

I'm not sure whether the current software allows the Apple TV to play music with the TV turned off or no TV at all, however some versions have not permitted this.

Yes, the OS is updated periodically and new features are added, some of these updates have not allowed the Apple TV to play audio without a TV.

The answer depends on how you're getting the audio to the receiver.

If you're using HDMI, you're subject to various HDMI issues, and the ATV can be problematic with some Denon receivers as can be determined from reading this forum. FWIW, I have an AVR-789, and the ATV definitely works over HDMI with no TV connected to the receiver. (I use my ATV solely as an Airplay audio bridge to my receiver; I don't hook the ATV up to a TV except to configure it.)

If you're using optical, it was possible to use the ATV with no TV or the TV turned off from the introduction of the ATV 2 until the 4.4 update was released in Oct 2011. Apple broke the functionality in 4.4 but fixed it in 4.4.3:

    http://support.apple.com/kb/HT4448

They were a tremendous number of messages posted here complaining about this bug between 4.4 and 4.4.3, but they have subsided, so I guess it is fixed. I restored the 4.3 firmware to solve this and another 4.4 problem, the Airplay 2-step bug. The latter remains unfixed and requires one to switch back and forth between Airplay targets to make the ATV play audio. If you don't get mad enough to start pushing buttons, you could wrongly conclude the audio is still broken.

And yes, you can use the remote app to stream iTunes content on your computer to the ATV. You can also stream content from the iPhone or whatever to the ATV.

I want the same like u. I want to use my ATV solely as an Airplay audio bridge to my receiver over HDMI. I'll have a try and i'll post the result here.

You'll still need to connect it to a TV to set it up. If you have no intention of using it for its video capability, you may want to consider an airport express instead.
