Is there an option in Mac OS X Lion (10.7.3) where I can set my system to automatically login to my university's remote folders and drives on their network?

Try this:

Open System Preferences, Users & Groups, Login items for the account of interest.

Drag the server's icon into the Login items list.

Might work.

You could also create an Alias (Finder -> File -> Make Alias) of the network volume while it is mounted. If when you mounted it, you also saved the password in your keychain (generally an option you check while entering your server's password), then when you double click on the alias, it should automatically mount the volume. This can be useful when using a laptop and you are returning to campus and just waking up your Mac.
