Hi. I am wondering if the intel core i5 processors have two cores. That meaning, with boot camp, can I run Windows as well as OS software with an intel core i5 processor?

The number of cores has nothing to do with the ability to dual boot.
All the i5s used in MBPs to date are dual-core i5s.
You can only run Windows in Boot Camp, not the Mac OS. If you need to have both OSes running simultaneously, use virtual machine software such as VMWare Fusion or Parallels to run Windows, instead of booting into Windows via Boot Camp.
