My printer sees my Iphone, but my Iphone doesn't find the printer in the bluetooth device setting. I can tell the phone is searching for bluetooth devices, but never finds the printer. What am I doing wrong?

You can't print using bluetooth. You need either use an AirPrint printer (see http://support.apple.com/kb/ht4356) or an app that emulates AirPrint. Iphone bluetooth is restricted to car kits, headsets, some keyboards, carrier supported tethering, etc., but not printing.
Any bluetooth device needs to be set to 'Discoverable' in order for the phone to connect to it. Consult the documentation for your printer to find out how to set it to Discoverable Mode.
