I just want to view one document

I made a bunch of documents in Pages. When I want to go back and work on a doc, all the other projects I've worked on open too. I just want to open one document at a time. I tried going to finder and right clicking open, but the rest of my stuff always opens too. Is there any way to just open the doc I need, without twenty windows of my other stuff appearing as well? Signed, frustrated.

There is a setting somewhere, but Apple has made this so intuitive that I can't find it in either Finder's preferences nor the System nor Pages preferences.

Lucky for you I use Google Chrome and can type in natural English questions in the URL field:

Menu > Apple > System Preferences > General > uncheck Restore windows when quitting and re-opening apps
