If I have xcode on my imac then how I can use ipad simulator to test my ibook.

You can't install iBooks 2 to it and you can't target it via Preview, so no, sorry.
The best you can do is to output a PDF and open that on your computer.
How should he test his ibook when its converted to PDF? Why are the developers for ebooks sabotaged by apple? Or is it technicaly not possible to deliver the ios simulator with ibooks!?!
You need to have access to an iOS device to test an ibook. You can give Apple your views on that requirement at
