Do not try and run a 2.3 (Lion) Xsan client with an older Xsan controller. What version of Xsan are you currently running?
If you are going to introduce Lion into the mix, then you should plan to upgrade everything. Mixing and matching will, at best not work, and at worst destroy everything you have.
If you are not ready to make the leap to Lion, then restore the original OS to the new drive and stay the course.
To answer your licensing question. Lion includes a license for Xsan. There is no serial number required. And there in is the rub. To add a Lion client you need a Lion MDC with the latest Xsan admin tools.
Good luck. Not a great place to be in, especially if your current Xsan is 1.x or an early revision of 2.x.

My organization is about to perform this same process for our setup. We are currently running a version 1.4.2 Xsan and about to be upgrading all of our mac-pro's to lion. De-servicing an old Xserve G5 (one of our current MD controllers - wooowww) as it won't run lion, and upgrading everybody/rebuilding the SAN. I'm trying to understand what you mean by "lose your licenses". Your licenses are solely in your serials.. so as long as you have your serials, you retain your licenses. Now will you be able to use your old 1.4.2 license with the new Lion Xsan v2.3? No - so everybody has to move up together (as Strontium stated). So what do we do with these old 1.4.2 licenses? trust me - there are corperations out there/edit houses that are looking for 1.4.2 licenses. It hurts me to say we have to dump off our investments, but the payoff is going to be spectacular, just imaging the updates in the jump from 1.4.2 -> 2.3 ... and the efficiency therein and how much it's worth and how you've probably paid for your investment in the original licenses.
So your inverted situation - if you update to lion- you cannot go back and install 1.4.2 on it to work with the old SAN as version 2.3 is built in. I doubt if it will let you do it. If you have a test box around, I'd suggest trying that first there - and seeing if you can even load Xsan 1.4.2 software (pretty sure you can't).

You can upgrade your sever to lion though. It will keep track of your license and xsan config. However I would strongly recomened doing a full backup of your san prior to the upgrade. If possible a clean install of lion and createing a new volume is best practice. Then just repopulate the data form your backup. I did the upgrade form SNL to Lion and had some non destructive issues, but the issues didn't go away untill I wiped and remade the SAN volume (with a diffrent name). Xsan 2.3 has been great!
Also backup the san config files!
