Here is an excerpt from: http://support.apple.com/kb/HT3777

How do I choose the operating system that starts up (boots) my Mac?

After running Boot Camp Assistant and installing Microsoft Windows and the Boot Camp drivers, hold the Option (Alt) key when you start up to switch between Microsoft Windows and Mac OS X. Use the Startup Disk control panel in Windows or Mac OS X Startup Disk preferences to set the default operating system to use each time the computer starts up.

I hope this helps

You skipped the Boot Camp Guide.

There is now in Windows a quick switch icon; a Boot Camp control panel with its own startup; as well as the one in OS X. T here is Apple OSSwitcher added to Windows services now.

x = Mac OS X on startup also in addition to Option key

Windows had to be the default to do all the updates and restarts.

guess you never tried boot Mac from another OS X volume.

Also in rare cases zap PRAM to clear the default OS.
