I have a macbook air and installed parallels on it. I also have a monitor hooked up to the macbook. Is there a way that I can have my windows running on the monitor and lion running on the macbook air?

Yes. In extended mode drag your Parallels window to the external monitor.

My parallel opens up in another desktop. Is there anyway I can turn that off so that I can use the extended view?
As suggested by The hatter, go to the Parallels forum to determine how to set up Parallels to open in a window. Then just drag that window to the external monitor, assuming your OSx display setting does not have mirror display checked.
