Is there a way to copy a string of text messages into an email

Sure. Get http://www.allyourtexts.com.

It works great! It will copy an entire conversation preserving the time and date stamp. It will graph your text massage usage on a daily or, or hourly, or text per hour of the day. Here is a sample of a conversation:
