Will iPad 1 work with the new Apple TV, specifically using AirPlay?

yes, although Mirroring is not supported...

it will work but not mirror so only apps which are made to support airplay
unlike ipad2 and later where you can mirror so the tv display what the ipad display

You cannot mirror. You would have to put the documents on the iPad as a photo or video to AirPlay them.
