You know when you go to Insert> Choose...> and then pick an image you can't make it rectangular, or squished vertically/horizontally? It has to stay in its original form, or smaller, or larger. Any way to change that?

Use the metrics inspector & uncheck constrain proportions & you can change each dimension without affecting the other.

I think you actually want to crop the image:
click on image > Format > Mask > drag in and out on the white handles > click on the faded outside part to move or rescale the image itself
Use Mask with Shape to crop using other shapes such as circles, triangles stars etc.
