Restoring iPhone 4S to iOS 5.0.1

I have a factory unlocked iPhone 4S 16GB running iOS 5.0.1. Just like everyone else, I have major battery drain! It loses like 20% overnight! I sleep For about 8 hours. So thats 20% gone in 8 hours. So I was thinking of restoring it. When I click on the Restore icon in iTunes it starts updating my phone to iOS 5.1! I don't want to update to 5.1. So I was wondering whether I could download iOS 5.0.1 from the web and then Shift + Click on the restore icon and restore my phone. Will that work? A lot of people are saying that it won't work because Appl has stopped signing iOS 5.0.1. I have no idea what that means. But I used to Shift + Click and restore my old iPhone 3G and it restored perfectly. It's still running iOS 3.1.3 haha. And Its also factory unlocked.

So, would Shift + Clicking on the restore icon in iTunes and manually selecting iOS 5.0.1 restore my phone? I really don't want to update. Thanks :)

You can ONLY restore to the latest software available.

Then how come I kept doing that with my old iPhone 3G? iTunes had been telling me to update to ios 4 since 2010. I kept shift + clicking on restore and restoring my phone and it worked perfectly :/

You should not have been able to do this. It is not supported by Apple.

iOS 5 isn't compatible with the 3G so iTunes would have just put the latest iOS for your iPhone even if it was older than iOS 5

What you did was retore to the same version of iOS 3 on your phone by using the iOS version already downloaded to your computer. You could not have done this if you had previously updated to iOS 4 - you can't downgrade in that way.

If the previous version is no longer supported by Apple it will not allow the restore and will prompt to download a new one, unless the iPhone has been jailbroken and SHSH blobs backed up to services like Cydia and the download server address altered in iTunes and if that's the case support is against the T&C's of this forum

Guys, I'm trying to restore my iPhone 4S. NOT the 3G :) yes the 3G was running 3.1.3 so I just restored it back to 3.1.3 (same version it had). And thats what I'm trying to do with the 4S! :D it's running 5.0.1. So can I download 5.0.1 from the web and Shift + Click on the restore icon and restore it? All I'm trying to do is restore it back to the same version it CURRENTLY has. I never updated to 5.1. I have 5.0.1 running. Only trying to restore the same version I'm running. Is it possible? Coz I kept doing the same trick with my 3G for 2 years! :D
