Is it possible to gain a virus from using safari or downloading an app straight from the iPod touch, and then to transfer it from the touch onto a PC when connected? Is it even possible to get a virus on an iPod touch?
There are NO virus capable of affecting any iOS device.

only if it is embedded into a PDF, and even then, it would be hit and miss. Apps like AirSharing can also carry an infected file, but no the apps themselves can not be infected.
I'm not an expert but I can't imagine how a virus can actually be embedded into a pdf.
you can actually embed a lot of code into a pdf. I use it to put videos and animations into a PDF. In the same manner, a virus can be embedded.

I can't guarantee anything. The best I can offer is a "should". Even on my systems, I cannot 100% guarantee a virus free environment (though I have never caught one).
