I was given Epson Stylus NX420 3 in 1 printer with my MacBook Pro and would like to set it up but when I insert the disc it comes out. How do I go about downloading the disc to set up the printer? Wireless.

You can also download the drivers (software) from the Epson site here.
The drivers on the disc may not be up to date, so downloading from Espon assures you have the lastest driver version.
Once the drivers are installed, open System Preferences > Print & Scan then select the Print tab.
Click + to add a new printer and follow the instructions.
