How do I get an icon glossary.
I have no idea what some of the icons mean. Is there any way to get text instead of icons, and if not where do I get an icon glossary.

What icons? Inside an application, if so, which app?

If you're speaking of the icons on the iPhone home screens, they are a graphical representation of the App. The name of the App is under the icon. The name should be sufficient in explaining what the App does.
If you are talking about the icons on the status bar (The bar that runs across the top of the screen when on a home page look at page 12 in the iPad Users Guide.
