I've been trying to make a slideshow with some of my photos being in Portait mode as against Panorama and when reviewing
my slide show the top of the photo is being cut off. This appears to be for only those that are in Portrai mode.
Does anyone know how I can overcome this annoying aspect?

Make sure the slideshow setting isn't set to scale photos to fill screen.
That will create black areas on each side of the portrait photos but will not cut off the top and bottom.

It seems that I can only get the settings in your screenshot when in Classic or Ken Burns Themes.
I was trying to use the "shatter" themes but of course, that one cuts the heads off in
the photos.
Is there way of coverting portrait photos to a "landscape" mode? As all pics play as expected except when
they are upright photos, in the other themes.

Yes, there are some themes that cut off portrait oriented photos regardless of the other settings. there's nothing you can do about that except choose a different theme or slideshow creation application.

It becomes a bit hard when trying to make a slideshow using other peoples old pics.

I know what you mean. That's one of my biggest gripes with the iPhones. The are designed so that it's easier to take photos and videow in portrait mode and that mode is the hardest to display with normal formats. I'm slowly getting my wife to go to the landscape mode but it's a real fight.
